Tasty Tuesday!

One thing you have to know about me is that I am a picky eater. I dont like alot of veggies. Potatoes, corn and  green beans are my go to veggies. But I am sorta sick of them. I was on pinterest looking for yummy recipes that are low calorie . I saw a bunch of recipes with zucchini. I never tried zucchini before so I was hesitant to buy some ( oh and squash- but I loved that when I was a kid )  .

My fiance and I went to Denny’s a few weeks ago and I saw on the menu that I could choose zucchini and squash as a side . It was a sign! 🙂 So I ordered it with my chicken and LOVED it!

So the following food shopping day I bought some zucchini and squash and made one of the recipes I found on pinterest for dinner.

Easy Cheesy zucchini and squash bake.  It’s so good. I didn’t use green onions, basil or thyme since I didn’t have them on hand. So I added some  italian seasoning. To each their own 🙂  And I substituted the pizza cheese with Cabot Mozzarella cheese.

Foody Friday

This past Sunday I posted a picture of the Baked Pickles I made on my facebook fan page. I got more shares and views on one post than I think I ever have. ( which is pretty sad).

Those pickles were sooooo good! I was able to make a few batches with one jar of pickles. Sandwich slices.

Baked Pickles are such a better alternative than snacking on potato chips. Which I have not eaten in weeks. I am in diet mode. 🙂

With only a few ingredients you can have a yummy snack. I believe I spent less that $10 for everything.  I highly recommend these.

Bread Bowls and Potato Soup.. The result

I have found my new favorite dish!!!! I was a bit nervous about making bread from scratch but it came out amazing….

My fiance helped which made it fun 🙂

This is his creation, as he called it.

That is just before it had to sit for 35 minutes to expand. Which wasn’t much. I was able to get about 6 round loafs out of it. I only cooked 4 though. They don’t look like bowls at all. I plan on shaping them more next time.

After they were cool I pulled some of the dough out for the soup. Here is the recipe I use for the bread bowls…. You can see that my bowls look NOTHING like theirs.

I also made Potato soup, also a first. I didn’t add any of the spices ( dill weed?) . It came out great with just the potatoes, chicken broth, cheese , a bit of salt and the heavy cream substitute I made. ( 1/3 melted butter and 3/4 milt- add one tbs of flour if using low fat milk.),

I added more cheese and bacon to the top. Since I wasn’t sure if the bowls would hold the soup , I placed the bread bowl in to a soup bowl .

Jon can’t stop talking about it ! 🙂 It was SOOOO YUMMY! bread bowlThings I would do differently …. Since making the bread takes a little over 2 hours to make, I will have to start at about 2:30 . I think I started the bread around 3:20. We at about 6. We usually have dinner at 5.   Like I mentioned, I want to shape the dough a bit more so they come out looking like bowls or close to it. oh and take better pictures!!

I can’t wait to make this dish again!!!!!

Its time to go food shopping !!

A chore I dread every Thursday.

Whats on the list? The usual… meats, lettuce , bananas, lunch meats, milk, eggs, tp, pt, noodles, veggies…. but this Friday I want to make bread bowls and soup for my fiance’s and my at home date night . I just need some dry yeast and cornmeal, I have everything else.

This will be my first time making bread bowls… any kind bread actually. I’m excited !!! I love cooking.

This is just in time for Foody Friday which I want to get more into.  I usually don’t take pictures of the food I prepare because of bad lighting in my itty bitty kitchen. I started a blog on blogger last year about my food adventures but like I said before I don’t take many pictures of my food. The Simple Foody blog is just a few recipes.

I am hoping for great sales since I have not gotten into the coupon craze yet. I know I should. My shopping trip is a bit simpler that Stop and Shop has one of those scanner thingies that card members can carry to scan their items and place in the bags themselves and checking out at the self checkout instead of waiting in line. But even those can be a pain in the a$$.

With my 10 resuable bags in hand I am ready to go…… in 1 hour..hehe

Stew Time!

I love to cook. But cooking for picky people ( fiance and his mom) is annoying. Jon isn’t as picky as his mom. When I find a recipe I have to adjust it so all 3 of us will like it and eat it.

I found this recipe called Hamburger Stew  last month when I was unsure what to make with the hamburg I took out that morning to thaw. I wanted to try something new.  This recipe sounded yummy and with a few adjustments I knew the picky one would eat it.

Here is MY version of Hamburger Stew

In a large pan ( I used one that I use to make spaghetti in)

1 lb of hamburg – cook and drain grease

cut 3-4 small potatoes in to small pieces ( or 2 cans of potatoes or a half bag of hash browns)

1 cup of tomato sauce

2 cups of water

1.5 cups of corn

1 can of carrots ( or any veggies you like) 

small amount of salt

small amount of Bell seasoning ( my addition)

add all this to the pan, cover for 30 minutes on medium high until it boils , uncover and cook for 30 minutes more or until the potatoes are cooked.
